health. It is sweet and pleasantly crunchy
when raw, and smooth and tender when
cooked. It does not need any fancy dressings
to be delicious. Try it raw, simply shredded
or chopped, dressed with olive oil, vinegar,
salt, and pepper, maybe add a grated carrot,
and some crumbled feta cheese.
