Freshly dug potatoes are amazingly delicious. For easy oven-roasted new potatoes, cut potatoes into one-inch pieces. Those that are one-inch diameter can be left whole; larger ones can be cut in halves or quarters. Lightly coat potatoes with olive oil, rolling until evenly coated. Bake at 350 degrees F, uncovered, mixing occasionally, for about 40 minutes, until light brown. Add salt and pepper to taste.
